Detailed microbial analysis and testing in our R&D labs indicate that beverage manufacturers may be over-cooking high-acid beverages. Lowering the temperature in the second pasteurization can lead to a 20% reduction of energy consumption and a 16% carbon footprint reduction with product quality maintained. This new concept, for which an international patent is pending (ref:PAT04580WO), will allow more recipe and line flexibility.
