Cottage Cheese
Cottage cheese is a creamy, granular, fresh cheese. It is an acid curd cheese that relies on warm milk to form a curd as it acidifies.
Once the milk has formed a firm curd, it is cut into pieces and whey expels from the curd. Curd grains are gently heated in the whey until they have the desired texture. The curd is then drained and washed in water removing the whey. Curd grains are then mixed with dressing.
