Soy Milk Chicken Curry

Anyone who is a fan of curries will love this recipe. A healthier way to cook this mouth watering dish, with less worry!

You’ll need

Ingredient A
1 kg chicken (cut into 12 pieces)
3 potatoes (quartered)

Ingredient B
1 large onion
1 clove garlic
2 cm young ginger

Ingredient C
1 cinnamon stick
4 star anise
3 cloves
2 cardamoms
2 stalks of curry leaves

Ingredient D(finely ground)
10 small red onions (shallots)
4 cloves garlic
2 cm ginger

Ingredient E(mixed together into paste)
80gm chicken curry powder
¾ spoon dried chilies (finely ground)
A little bit of water

Ingredient F
400ml soy milk in Tetra Pak carton
1 lemon grass (crushed)
Tomato (quartered)
Green and red chili for garnishing

Method
1. Sauté ingredient B and C.
2. Add in ingredient D, followed by ingredient E. Sauté till crisp.
3. Add in Ingredient A and water. Cook until both chicken and potatoes become tender.
4. Once they are tender, add in ingredient F. Let it simmer until the mixture starts to boil. Serve with garnishing.
