Tetra Special Pearl Pudding
Ingredients
1 cup low fat milk in Tetra Pak carton
1 cup soy milk in Tetra Pak carton
6 eggs
4 tablespoons fine sugar
4 tablespoons rice flour
½ cup corn biscuits (crushed)
½ cup diced pineapples
½ cup lychees
½ cup brown sugar (cooked with ½ cup of water)
2 teaspoons vanilla essence
Method
1. Cook brown sugar with ½ cup water and set aside. Boil water in a steamer.
2. Whisk eggs with sugar. Then add milk, soy milk, rice flour, crushed biscuits and vanilla essence. Stir well and strain.
3. Prepare a mould and pour in the brown sugar syrup. Arrange lychees and diced pineapples. Then pour in the egg mixture. Steam the pudding for 30 minutes.
4. Take it out and serve with the remaining syrup, fruits and garnish with cherries or as you please.
