Starter addition

Bulk or direct set starter is normally added to the cheese milk while the cheese vat is being filled. Early in-line dosage of starter helps to achieve good and uniform distribution of the starter bacteria and time to become acclimated to the new medium. Starter is usually added at a rate of 1-2%, and can be added manually or automatically dosed.
