Mixing
Carbonated soft drinks as well as many still beverages are formulated with a number of ingredients – nutrients, flavours, intense sweeteners – that are present at very low concentrations in the packaged product. These compounds are commonly combined, or pre-mixed, into a solution that is then blended with sugar and water into the final beverage.
The dry ingredients are dissolved and mixed with water into a homogenous pre-mix. Liquid components, such as flavours and vitamin compounds, are either mixed into the pre-mix or with fruit juice concentrates.
Key factors for consistent and high beverage quality are a smooth pre-mix, free from lumps and ‘fish-eyes’ and prepared without entrainment of air. Aspartame and maltodextrins require special considerations as these substances do not dissolve readily in water.
