Cottage cheese curd making
Cottage cheese is a fresh cheese, made from a mix of curd and dressing. The perfect cottage cheese will show nice small cube-shaped cheese particles in a creamy dressing. The final product will typically contain a fat content between 0 and 5%.
Cottage cheese curd is made from acid coagulated skimmed milk by means of fermentation of the milk with lactic acid bacteria. In some cases, a small amount of rennet is added as well. The curd is cut in cubes and cooked to reach the right moisture content. After the whey is drained off, the curd is cooled in water. After the cooling, the curd is separated from the cooling water and the mixing of curd and dressing takes place. By now, the product is ready for packaging and further on ready for distribution.
