Cheese blockforming

In the cheese blockforming process salted curd chips are fused together under vacuum and gravity. The resulting cheese blocks are of uniform consistency, and free from excess moisture and air.

At the base of the tower, blocks of identical size and weight, typically 18 – 20 kg, are automatically cut to size and ejected into plastic bags.
