Evaporation
An economical way to remove water from a liquid, like milk, is the use of a Tetra Magna Evaporator.
Product is fed into top of the evaporator. Under vacuum and at low temperatures the product starts to boil and flows through the tubes. At the bottom section the product is collected. Vapour is then sucked through a separator, whereby concentrate and vapour are split. As a driving force steam (TVR = thermal vapour recompression) or electricity (MVR = mechanical vapour recompression) can be used. Selection is strongly based on utility costs, water evaporation capacity and availability. As evaporation is much more energy efficient than drying, you should concentrate as far as possible. Limiting factor is the concentrate viscosity, as the product must be fluid enough to wet the tubes.
