Today, numerous different processes are used to produce hummus. None of them are flawless – they could come with high costs, have limitations in capacity or even entail food safety issues. Now, you no longer need to compromise. Based on full pasteurization and a 2-phase cooling system, our new, patent pending concept lets you produce hummus in a cost-efficient way – at the highest level of food safety.
Full pasteurization and the closed system for rapid, deep cooling create a food-safe environment and the end-result you are after: a product with long shelf life and of consistent quality. How we know? We have verified various quality parameters through extensive testing at our mixing technology test centre.
Expect low operational costs. An example production scenario shows that using Tetra Pak® Continuous Freezer S instead of a scraped surface heat exchanger can reduce energy consumption by 38% and product losses by ~70%1 in the cooling step. There is no need for an external ice water or glycol water system, and it is a space-efficient solution too. The installation process is easy and quick. The freezer is plug-and-play: just connect water and electricity and you are ready to go.

The patent pending solution is based upon two well-established and proven key components: our Tetra Pak® High Shear Mixer and Tetra Pak® Continuous Freezer S. These technologies are now combined into something completely new – in summary, a concept built upon innovative thinking and decades of expertise.
